BEE HOON GORENG OR FRIED RICE VERMICILLI  [SINGAPORE AND MALAYSIAN RECIPE]

I  prefer simple bee hoon goreng ... I avoid  seafood or chicken in my recipe....  following type of bee hoon  will be simple,spicy and tasty... Vegetarians can avoid eggs and add more tofu instead....


BEE HOON GORENG OR FRIED RICE VERMICILLI


INGREDIENTS:

Bee Hoon [ Rice Vermicelli]         - 100gms

Mustard leaves                              - 1/2 cup

Bean Sprout                                  - 1 cup

Cabbage                                        - 1 cup

Eggs                                              - 2

Tofu                                              - 2 pieces

Garlic                                           - 5 cloves

Ginger                                          - 1 inch

Dry Red Chilli                              - 4 

Shallots                                        - 3 

Chilli Sauce                                 - 1 tbsp

Tomato Sauce                              - 1 tbsp

Soy Sauce                                    - 1 tbsp

Vegetarian Oyster Sauce             - 1 tbsp

Vineger                                        - 1 tsp

Sesame oil                                   - 1 tsp

Salt                                              - to taste

Oil                                              - 4 tbsp

Orange Food Color                    - a pinch [optional ]


METHOD:

Soak bee hoon [ rice vermicelli] in warm water till soft and remove and keep aside...

Whisk the eggs and keep aside...

Grind together Shallots, de-seed the dry chilli and 3 cloves of garlic ....

Take a wok or a large frying pan...

Add 2 tbsp of oil ...

Add the whisked egg and fry it well, remove it keep aside...

Add 2 tbsp of oil again to the wok..

When hot add 2 cloves of chopped garlic [ balance 2 cloves]..

Add ground paste and food color [optional ]... saute it well till the oil oozes out....

Now add tofu and stir it for a while...

Add all the sauces, sesame oil and vinegar ...

Now add the Bee hoon and stir it well

Add the cabbage, mustard greens  and
bean sprouts and stir it well...

Add the fried eggs and mix it well....

Serve it hot....

Yummy and Spicy Bee hoon is ready to taste....

Vegetarians can avoid egg....

ROTI JALA [SINGAPORE & MALAYSIAN] RECIPE

ROTI JALA
INGREDIENTS:

All Purpose flour                                    - 2 cups

Coconut Milk                                         - 2 cups

Eggs                                                        - 2

Turmeric Powder                                   - 1/2 tsp

Water                                                      - 1 cup

Salt                                                         - to taste


METHOD:

Whisk together eggs, coconut milk, turmeric powder, salt ....

Add water to it...

Take a bowl ....

Add All purpose flour to it...

Now stir in the mixture of egg and coconut milk...

Mix it well....

Strain the batter through a sieve...

Now take a non-stick Tawa and heat it ....

Grease the tawa with some oil...



Roti Jala Ladle

Take roti jala ladle full of batter and hold it above the tawa and rotate it in circular motion...



Lacy Pattern Roti Jala

This will form a lacy pattern ... 

Cook it till done and fold it in triangular shape a roll shape....




Continue the process till batter is finished .....

Roti Jala goes well with chicken curry... 

Familiar dish in Singapore and Malaysia...

PIZZA BASE

INGREDIENTS:

All Purpose Flour         - 2 cups

Yeast                              - 1 tsp

Sugar                             - 1 tsp

Oil                                  - 1 tbsp

Salt                                 - 1 tsp

METHOD::

Dissolve yeast in warm water and keep aside..

Take a bowl add flour, sugar, salt and oil and mix together..

Add yeast to it and mix well and make a soft dough ...

Cover it with muslin cloth and allow it to double..

Allow it to stay for 15 mins..

Now take the dough of your wish and roll it and prick it 

Place it in baking tray..

Bake at 180ºC for about 5-7 mins..

Top it as per your wish...

INGREDIENTS:

Sweet  Potatoes                          -  1/2 kg  

Sugar                                          -  1/2 cup

Coconut Grated                          -  1/4 cup


METHOD:

 Steam Sweet potatoes well.....

Mash is well ...

Add sugar and grated coconut to mashed sweet potatoes ...

Mix it well....

Make balls out of  it....

Healthy snacks for children .....

Can be had as evening snacks...

CARROT KHEER


INGREDIENTS:

Carrot                      - 5

Milk                         - 1 cup

Evaporated milk      - 1/2 can 

Sugar                       - 1/2 cup 

Saffron                     - few strands

Cashews & Raisins  - 2 tbsp 

Ghee                         - 1 tbsp

METHOD:


Fry Cashews and raisins in a tsp of ghee and set aside.

Dissolve the saffron strands in a little bit of warm milk.

Peel the carrots and cut them into small slices.

Pressure cook the carrots with about 1 cup of milk until well cooked.

Once cooked  let it cool. 

Grind it to a smooth puree in blender. 

Take a heavy bottom pan.  

Add the ground puree and sugar and mix it well.

Now add the evaporated milk and let it to boil. 

Add the dissolved saffron strands and remove from flame.

Garnish with the nuts.

Serve cold.....

Yummy Carrot Kheer is ready to taste....

Caramel Pudding


INGREDIENTS:

Sugar                                  -  1 cup

Milk                                    - 3 cups

Eggs                                    - 3

Vanilla essence                  - 1/2 tsp

Nutmeg powder                 - 1/4 tsp

METHOD:

Take a small and heavy saucepan.

Combine 1/2 cup sugar and 1/4th cup water. 

Heat and stir until the syrup turns golden brown colour.

Remove pan from heat and while hot pour the caramel into  mould and spread it to the bottom and sides.

Take a bowl and beat 3 eggs with hand blender.. 

Then add 1 cup sugar and vanilla extract.

Gradually add milk stirring continuously.

Pour this mixture into caramel coated mould. 

Cover the mould tightly with aluminium foil.

Steam this for at least 20 minutes in a steamer.

Cool it and refrigerate as it is tasty when cold.

Serve inverted on a serving plate.

Yummy yummy Caramel Pudding is ready to taste...

This  is healthy and tasty soup .... when pasta is added it will become children's favorite too.... of course we too will feel content this soup....

Veg Soup With Pasta



INGREDIENTS:


Onion                                        - 1


Carrots                                      - 2


Celery sticks                              - 3


Tomatoes                                   - 2


Green beans                              - 50 gms


Tomato puree                           - 1/2 tbsp


Leek                                          -  1


Frozen peas                              - 50 gms


Pasta                                         - 50 gms


Hot  water                                 - 1 lt

Pepper  Powder                        - to taste


Coriander leaves                       - 1/2 tsp


Vegetable oil                              - 1/2 tbsp


METHOD:



Chop all the vegetables and keep aside.


Take a frying pan heat  the oil .


Add the onions, carrots, leeks and celery, and saute for 2 mins. Lower the heat, cover and cook gently for five minutes.


Add the chopped tomatoes, green beans  frozen peas and tomato puree


Raise the heat. Add Hot water to it.


Bring to the boil and add the pasta and pepper.


Lower the heat and simmer for 15 minutes so that pasta will be well cooked, stir  frequently to make sure the pasta doesn't stick.


Once cooked remove from heat....


Garnish with coriander leaves...


Your Veg soup with pasta is ready to taste...


Serve it hot...


CHICKEN EGG FRIED RICE...........


I am very happy to post my 100th post...... I want this post to be unique in my blog so decided the step by step procedure  with photos........ and also Iam posting this in few mins after 2014 is born.......

CHICKEN EGG FRIED RICE............





INGREDIENTS:



Ingredients

Cooked Basmati Rice                 -  2 cups

Eggs                                            -  2

Cooked Chicken                         - 1 cup

Onion                                          -  1 medium

Garlic pods                                 -  5

Green Chilli                                -  1

Carrot, Beans and Capsicum     -  1 cup

Spring Onion                              -  1 cup

Soya Sauce                                 - 2 tbsp

Oil                                               -  2 tbsp
  
Salt  [Optional]                           - to taste


Ingredients for chicken egg fried rice


Take a Chinese Wok or a large frying pan..........keep the flame high...........


Add oil
Add oil to it. When its hot  .........


                                                                                    Add chopped garlicAdd garlic [chop the garlic]. Saute for few mins


Add chopped onion
    Then add chopped onion and saute for few more mins.............


Add chilli

Now add green chilli or cayenne chilli and saute for a minute..........


Add beaten eggs
Now add the eggs [beat the eggs well before adding]


Let the egg scramble 

Saute it well to make scrambled egg..........


Add cooked chicken pieces
Now add the chicken pieces  [ clean and cut the chicken in to small pieces and cook it with salt and a pinch of turmeric and chilli powder separately ]



Add carrot, french beans and capsicum
Add carrot, french bean and capsicum.  Mix it well .........


Add cooked basmati rice
Now add the cup of cooked rice ...


Blend it well
Mix it well for few more minutes....


Add soya sauce

Add the soya sauce mix well.......... check the salt.... if you need more... add salt  or one more tsp of soya sauce.. [Soya sauce contain more salt  so add salt only if needed]


Add spring onion
At last add the chopped spring onion and mix it well..........


Chicken Egg Fried rice is ready

Your  Chicken Egg Fried rice is ready now..........


Serve it hot with tomato and chilli sauce

Serve it with tomato ketchup and chilli sauce  .............
