KOTHU PARATHA


Kothu Paratha

Ingredients:

Paratha                            -  5 

Egg                                   -  4

Onion                               -  2 [finely chopped]

Chilli powder                    - 1 tsp

 Salt                                  -  to taste

Chicken cooked               -  1 ladle

Curry leaves                    -  3 stigs  

Oil                                   -  2 tbsp

Method:

Shred the paratha in to small pieces.

Heat oil in a Iron dosa tawa. Saute chopped onions till turns golden brown.

Add  egg, curry leaves, chilli powder,  salt and saute for 5mins.

Add four ladle full of chicken  [cooked with salt and chilly powder ]to the kadai and fry till it becomes little crispy.

Use  ladle to chop the mixture into small pieces.

 Serve hot with raita.

KOFTA CURRY





Ingredients for Kofta or  Kola Urundai:


Mutton Keema                                                  - 250 grams


Roasted Chana dal                                         - 1 cup                  

(pottu kadalai/udaitha kadalai)                                    

Fennel seeds               - 1 tsp


Salt                                -  to taste


Green chilies              -   3


Garlic                                 - 5  pods


Red Chilies                        - 2


Fennel seeds                    - 1 tsp

Cilantro leaves         -  1/4 bunch


Mint leaves                -  1/4 bunch





Ingredients for Gravy:



Onions finely chopped                -    2


Tomato finely chopped              -    2


Ginger  & Garlic paste                -   2 tsp

                           
Shallots                                             -  8

Green chilies                                    -   2


Curry leaves                                     -   3 twigs


Turmeric powder                             - 1/2 tsp


Chili powder                                      -  2 tsp


Cloves                                                  -   5


Cinnamon                                          -   2 inches


Cardamom                                        -   3 pods


Fennel seeds                                     -   2  tsp


Bay leaves                                         -   2


Poppy seeds                                      -   1 tsp


Fresh coconut milk                        -  2 tbsp


Oil                                                          -  for deep frying


Salt                                                        - to taste


Cilantro leaves                                 -  1/4 bunch 


Curry leaves                                      - 1 twig


Method:



Method Kola Urundai/Meat Balls:


Grind minced meat  using your blender to thick paste.


Powder the toasted chana dal...... set aside.


Wet grind chilies, onion, cilantro, mint and fennel seeds together.


Now combine, ground meat, salt, wet-ground paste and powdered chana dal


Make equal parts out of it and small balls


Method Gravy :


In a pan heat oil, add cloves, cinnamon, cardamom, fennel seeds, bay leaves, curry leaves and green chilies. Saute them for a while.


Now add shallots  and saute till golden brown.


Add ginger & garlic paste to it. 


Add tomatoes and saute for a while


Now add  salt, turmeric and chili powder. Add 2 cups of water. Cover and cook over medium heat.


When the gravy boils  well, add poppy seed paste and  thick coconut milk to it.


Now add kola-urandai one by one in the gravy. They should be immersed in the gravy. 


Cover and cook for 20 minutes or so. When the meat balls are done and yet intact in the gravy…remove from heat.


Garnish with cilantro leaves.

INGREDIENTS:



Minced meat                                               - 250 gms


Onion                                                         - 1 large


Green chillies                                            - 4


Ginger piece                                              - 1 inch


Garlic pods                                                - 3 


Turmeric powder                                      - 1/4 tsp


Fennel seeds                                             - 1/4 tsp


Roasted gram dhal Powder                      - 1/4 cup


Coriander leaves                                      - 1 tbsp

Garam masala powder                             - 1 tsp


Salt                                                           - to taste


Oil                                                            - for deep frying


METHOD:



 Pressure cook the mutton kheema, green chillies, ginger piece, garlic and  turmeric powder. 


 Once cooled, grind coarsely  along with the roasted dhal powder and fennel seeds.


 Now mix the chopped onions, salt, garam masala powder chopped corriander leaves to the mixture.



 Heat oil in the deep frying pan........., take a small amount of mixture....... make small ball then flatten to get vadai shape.  Deep fry them on medium flame till golden brown.........

Serve it hot................

INGREDIENTS :


Fish [seer fish, Barracuda  or king fish]   -  1/2 kg


Chilly Powder                                            -  3  tbsp


Turmeric Powder                                       -  1/2 tsp


Ginger & Garlic Paste                              -  1 tbsp


Lime juice of                                             -  1/2 lime


Salt                                                            -   to taste


Oil                                                             -    for frying 



METHOD :


Mix all the ingredients together with  2 tsp of water and make a paste and apply it on the fish slices.


Marinate for 1/2 hr. 


Take a  frying pan and  pour the oil and fry it till golden brown.


Your fish is ready to taste.

Biryani with chicken-65 and onion raita




This is my Biryani which I made for the holy night of Shab e baraat..............  I was very busy from evening in preparing biryani ......... distribution to neighbours and to less fortunate people was a big task for me...... following by Asar prayer .....prayer for ancestor and  Maghrib prayer  I was  a bit tensed......... as I was wondering whether I could finish 3 yasins............. By the grace  Almighty finished everything on time........... and had a satisfying night prayer too...............

Mutton Biryani

Ingredients:

Mutton                 -         1 1/4 kg
Basmathi rice     -          1 kg
Onions sliced      -         6 big 
Ginger paste       -        6 tbsp
Garlic paste        -         5  tbsp
Green chillies      -         5 
Chilli powder       -        2 tbsp
Tomato chopped   -      7 big
Curd                        -   100 ml
Mint leaves             -     1 bunch
Coriander leaves     -     1 bunch

Lemon juice of    -          1 no
Salt                         -      to taste
Oil                           -     250 ml
Ghee                        -     100 ml



Whole garam masala 
Cardamom           -        4 no
Cloves                    -       4 no
Cinnamon             -       3 to 4 strips (1 inch each)  

star anise            -         3
Bay leaves            -     4 no


Procedure:

1.  Wash mutton well and keep aside. 
2.  Heat oil in a pressure cooker or thick bottom vessel. Add cardamom, cinnamon, cloves, star anise and bay leaves and stur for a minute.
3.  Add  chopped onions, green chillies (slit vertically), ginger and garlic paste. Continue stirring in a slow fire till the raw smell of onions reduces.
4.  Add chopped tomatoes and continue stirring till it gets smashed well.
5.  Add salt, chilli powder,  mint leaves, coriander leaves and  continue stirring  for few minutes.
6.  Add mutton, curd and continue cooking till the mutton gets 80 percent cooked. Add water if required.
7.  Cook the gravy in pressure cooker, once mutton is cooked you can transfer it to biryani vessel 
8.  Add lemon juice and mix it.
9.   Now add water in the ratio of 1:2

10. When gravy boils add the rice check the salt then close the vessel with its     lid. Do not mix after this stage.Your can open once and pour the ghee on the surface when all water is absorbed ..You need to put on burning charcoal above the lid .........Your biryani will be ready in 20 mins stitch off your stove and leave it .
11. U can open after 1/2 hr and check ....... do not mix vigorously ......... while serving take the rice from sides........

INGREDIENTS:

Chili Sauce                   - 2 tbsp 

Tomato Sauce               - 2 tbsp

Corn Flour                   - 1 1/2 tbsp 

Soya Sauce                   - 1 tbsp 

Vinegar                         - 2 tsp 

Capsicum                      - 2 tbsp

Spring Onions               - 2 tbsp 

Carrots                          - 2 tbsp

Cabbage                        - 1/4 cup 

Pepper Powder             - 1 tsp 

Sugar                            - 1/2 tsp 

Ajinomoto                     - 1/4 tsp 

Water                            - 4 cups 

Salt                               -  to taste 


METHOD:


Chop all vegetables and set aside.

Mix 4 cups of water, chili sauce, soya sauce, vinegar, sugar, salt, pepper powder and ajinomoto and bring to boil. 

Add all the chopped vegetables. 

Cook for a minute on a medium heat. Cook well..

Dissolve cornflour in 1/2 cup water and add to the soup. 

Stir constantly till it becomes thick. Cook for a minute. 

Add Tofu slices if interested.

Serve hot .

INGREDIENTS
Boneless skinless chicken  - 300 gms
Garam masala - 1 tsp 
Garlic and ginger paste - 3 tsp 
Red chilies powder - 2 tsp 
All-purpose flour - 2 tsp 
Egg - 1 
Food coloring, red - 1 pinch 
Yogurt - 2 cups 
Corn flour - 3 tsp 
Lime juice - 3 tsp 
Oil for frying 
Salt to taste 
Onions and coriander leaves for garnishing 


METHOD:


Take a bowl and mix corn flour, all purpose flour, ginger garlic paste, chilli powder, egg,Garam masala,food color, yogurt Lime juice and salt to thick batter. 
Add chicken pieces to the batter and marinate for about one hour. 
Deep fry the marinated chicken pieces till they turn golden. 
Now add lime juice, mix well and garnish it with onions and coriander leaves
